About the event
Fig tree is one of the most exciting plants on our planet. While we know and love the fruit (which is actualy an inside out flower), the leaf itself is one of the world's oldest but now most under-used culinary ingredients. Long before grape leaf dolma existed, ancient Greeks were wrapping cheese and honey in fig leaves. Turkish, Italian, and French cooks have used them for centuries to flavor everything from grilled fish to aged cheese.
In this hands-on class, you'll learn to work with both the fruit and the leaf — discovering a flavor and aroma that most people have never tasted, straight from a Central Texas fig tree in my backyard.
What we'll make together:
A dish wrapped and cooked in fresh fig leaves, live in class
Fresh fig salad, built around the sweet-salty-bitter balance that makes figs shine
Figgy sandwich with fig relish
