Noodles Made of Chicken

Some people chase plant-based meat trying to make fake food taste like the real thing. This class goes the other way: real chicken, transformed into noodles that look and chew like wheat — gluten-free by construction, and close enough to ramen that most people can't tell by looking.

We'll work through the process together: cold chicken thigh processed with egg white, ice water, and starch into a smooth paste, then piped into hot water to set. It's part science, part technique, and a genuinely fun project for anyone curious about how far you can push an ingredient.

You'll learn to serve the noodles two ways:

• Hot, in a warm chicken broth — with a build-your-own flavor bar: miso, yuzu kosho, soy sauce/mirin/sake, chili crisp and chili oil, plus toppings like microgreens and ramen eggs. Mix and match to build your own bowl.
