Noodles Made From Chicken: A Japanese Surimi Technique
Some chase plant-based meat to fake the animal taste. These noodles go the other way. Real chicken in a shape of noodles that look and chew like wheat. Close enough to ramen that nobody at my table could tell by looking. I won't pretend it's a weeknight noodle. It takes a processor, an overnight rest, a stand mixer, and the patience to pipe a dense paste through a 1mm tip — closer to a project than a recipe. But for a high-protein, wheat-free diet, it's worth the trouble.
